as part of the owners "Stash", and we were luckily able
to obtain some. This is a once in a lifetime opportunity as
2009 vintage Bordeaux are becoming extinct. ** Graves.

The Château de Carolle is located on the highest
ridges of the Graves appellation This wine has a rich and
complex texture, refined by very well controlled barrel
aging. The red fruit aromas combined with toasted notes
make this wine a perfect complement to red meat, poultry
and various cheeses. The grapes are picked by hand with
great care to eliminate damaged or unripe grapes. Upon
arrival at the winery, they de-stem and use slow pressing.
To obtain the excellent quality of grape pressings
after the harvest, the grape juice and peel
macerates together during the 1st fermentation for 3-4
weeks in steel tanks in order to obtain the typical
Bordeaux deep red color and tannins. The wine is then
moved to new oak barrels, which starts the 2nd
fermentation period. Aged 12 months in oak barrels.
Very dark ruby color with bright highlights, this wine
also impresses with its intense bouquet of ripe black
fruit, in harmony with the roasted notes, cocoa and
vanilla wood. In the mouth it is the perfect balance of
its tannic structure, smooth and powerful. A Graves at
once robust and delicious. A steal at this price.
